With over 35 years experience in the restaurant business and 20 years specializing in offsite catering in Staten Island, NJ and the surrounding areas. The Smoke’N Pit Started out as a BBQ addition to Bardi Catering/Private Chef Service owned and operated by Chef Joseph Marks who has been in the food industry since he was 13. Joe started out as a dishwasher and then a cook working at the original Lentos Restaurant in Bay Ridge Brooklyn in the 80s and early 90's making a very unique style of Thin Crust Pizza and other Italian specialties. Working alongside his mentor Chef John Urrico, Joe learned how important it was to have pride in what you do, and always use the best freshest ingredients available and how to bring out the best in anything you cook. Years later Joe went to Culinary School in NYC at the Institute of Culinary Education. Inspired by chefs like Bobby Flay and Lydia Bastianich Joe fell in love with Catering Special events in peoples homes and other venues. Joe then studied the art of BBQ and wood fired cooking when he went down south and met real true blue southern BBQ experts. He used his culinary skills he learned from Lentos and the institute of Culinary Education in NYC along with this new form of cooking and mastered true authentic southern style BBQ and the Smoke’N pit was born. To capture the essence of true BBQ, The Smoke’N Pit slow-smokes all meats fresh with a combination of fruit and hickory woods. Our BBQ is complimented with our homemade dry rubs and thin sauces (to compliment the food not smother it). The meat will show a strong pink-to red coloration called a “smoke ring”, which is a result of being cooked low and slow. The PINK smoke ring is not an indication of undercooking, as the BBQ spends many hours in the smoker and finishes at a“well-done” temperature of 170-200 degrees, depending on the type of meat. The Smoke’N Pit Pizza Parties are also unique. We bring the thin crust “Brooklyn Style” Bar Pie to any location in our custom trailer with a Forno Bravo wood fired pizza oven serving the best authentic wood fired pizza & rustic Italian dishes inspired by menu items from his past at Lentos and from his favorite restaurants such as Carmines in NYC, Dominick's in the Bronx, and the Original Rao's on the upper east side, fresh at your home or venue. All of our menu items can be customized to fit your needs. The Smoke’n Pit is available to cater all types of events, including weddings, after parties, corporate events and luncheons, pig roasts, tailgate parties, graduation parties, pizza parties, wineries, golf outings, block parties and other small or large events. We strive to be the best we can be. We also have a network of “Top Shelf” bartenders, chefs and servers we work with who are incredible..
